Using anything in the place of a letter is only acceptable if there can be no doubt what the letter's supposed to be. I love logos that use a solid outline and then fill with color. This allows it to be converted to black by simply removing a color. It's fresh and really conveys a 'sour' feeling. Well done. I really like this logo. The only thing I don't like are the cookie cutter packages you/they are offering on their site. ~$130 US for a logo and ~$50 US for Business Card, Letterhead and Envelope.
